
I was chatting with a client the other day who loves chocolate. Doesn’t everybody?
She confessed that she secretly hides chocolate to eat at night. So, while even though her dinner may be nourishing and balanced, she sabotages it with eating a full Hersey’s chocolate bar.
Now, we walked through what could be going on in the moment when she had the choice to eat it or not. But, listen, we all deserve a sweet treat every now and again right?
I’m not into that avocado chocolate pudding. I wish I was…I feel like it’s baby food (even though I love avocado!). Instead, I made this Dairy Free Dark Chocolate Pudding that is also loaded with healthy fats, silky and with just the right amount of sweetness!
You can eat this as is or top with about 1/4 cup of fruit.

Dairy Free Dark Chocolate Pudding
Ingredients
- 1 cup coconut cream (ideally additive free). You might be able to use full fat coconut milk here as well but I never attempted.
- 30 grams quality dark chocolate (I used about 4 Lindt chocolate squares)
- 2 Tbsp of collagen powder
- ½ tsp. gelatin powder mixed into 1-1.5 tsp. water
Directions
- Mix 1/2 teaspoon gelatin powder and 1 to 1.5 teaspoons water in a small bowl. Allow to bloom and thicken.
- Add the bloomed gelatin, coconut cream and chocolate into a small saucepan. Melt over low-medium heat until completely melted and combined.
- Remove from the heat and mix through the collagen powder.
- Pour through a fine mesh strainer to remove any lumps.
- Place it into the fridge to set, about three hours.
- Once set, mix with a spatula to a pudding consistency.
- Serve with grated chocolate or a 1/4 cup of fruit. Enjoy!
