Over the past year, I stopped eating a vegan lifestyle for a number of reason which I’ll reserve for another time. However, I did find the lifestyle very high carbohydrate and I was beginning to suffer from sugar and hormonal imbalances, both of which can be a result of a high-carb eating lifestyle. The great aspect out of all of it is that I still maintain high plant-based components to my diet now as they are loaded with healing vitamins and minerals.
Recently, I opened up to you about my recent low cortisol diagnosis and as a result, adrenal fatigue. You can read more about that in the post My Struggle with Low Cortisol & Adrenal Fatigue {Part 1}. Based on this recipe alone, there are two things that I have learned as a result of this diagnosis:
Ensure that you eat regular meals and snacks to manage blood sugar is essential for this type of diagnosis. When your body is fighting to create cortisol, the added stress of being hungry does not support the healing and rebuilding process. Soooooo, SNACKS!
Raw cacao is rich in calming magnesium AND it also has to ability to naturally energize the body.
Don’t get it confused with cocoa. CaCAO is from the cacao bean and it is minimally processed (if at all) and it imparts a rich, chocolate flavour since it is how chocolate is naturally sourced after all! Cocoa is highly processed which very little nutritional value.
Chocolate Pistachio Energy Bites (Paleo // Vegan)
Ingredients
1 cup pistachios
1/2 cup of coconut flakes, unsweetened
1/2 cup of MyProtein Raw Cacao
1/3 cup of nut butter (I used pumpkin seed)
1/3 cup of maple syrup (for vegan) or honey (for paleo) *I actually used less maple syrup for my preference so feel free to modify as needed.
1 tsp of cinnamon
1/4 tsp of grey sea salt
Directions
1) Put pistachios and coconut flakes into processor and process until a sandy mixture.
2) Add all remaining ingredients and process until it forms a ball.
3) Roll tablespoon amounts into balls and refrigerate for about 1 hour.
4) For some extra zip, roll into a couple of tablespoons of raw cacao.
