Life got better the moment I made this recipe! Perhaps I am exaggerating but when you are a coconut lover like myself, when you find and perfect a new recipe, it brings you happiness.
I spread this cream on a gluten free cracker or bread with a sprinkle of cinnamon. The husband loves peanut butter so he mixes the two. Heaven.
INGREDIENTS:
6 cups (or more) of organic, unsweetened, shredded coconut flakes (not large flake)
A pinch of salt
Optional flavorings: vanilla, cinnamon, nutmeg, chocolate, peanut butter, etc.
DIRECTIONS:
Place shredded coconut in food processor and blend for about 8-10 minutes until creamy
Store in jars at room temperature
